- Clean and Spread the fish (daing style)
- Rub salt and pepper all over the fish.
- Prepare the open fire griller (not coals)
- Put the fish on a spacious griller,skin on first.
- Control the flame by adding and removing wood
- Turn the fisk every few minutes to avoid burning.
- Once cooked and juicy, place on the big platter and serve with soy sauce with lemon dip.
