,%20it%20was%20a%20perfect%20day%20for%20chili.%3C/p%3E%3Cp%3EI%20have%20fallen%20in%20love%20with%20doing%20my%20chili%20by%20slow%20baking%20it%20in%20an%20enameled%20cast%20iron%20dutch%20oven.%20I%20think%20it%20gets%20the%20best%20texture%20that%20way,%20and%20there%20is%20no%20danger%20of%20scorching%20the%20bottom.%20It%20also%20gets%20the%20flavors%20to%20meld%20%20to%20perfection.%3C/p%3E%3Cp%3EI%20had%20a%20two%20pound%20pork%20sirloin%20roast,%20It%20was%20very%20lean.%20I%20cut%20it%20into%203/4%22%20cubes.%20I%20dredged%20it%20in%20flour%20seasoned%20with%20berbere%20(an%20Ethiopian%20spice%20mix)%20cumin,%20onion%20powder,%20garlic%20powder,%20pepper,%20and%20salt.%20I%20seared%20the%20pork%20pieces%20in%20small%20batches%20in%20a%20little%20vegetable%20oil%20in%20the%20bottom%20of%20my%20dutch%20oven.%3C/p%3E%3Cp%3EAfter%20pulling%20out%20all%20the%20seared%20pork%20pieces,%20%20I%20added%20diced%20onion%20and%20green%20and%20red%20bell%20peppers%20to%20the%20oil,%20and%20sweated%20them.%20%20To%20that%20I%20added%20diced%20fresh%20tomatoes,%20a%20can%20of%20crushed%20tomatoes,%20and%20a%20little%20pinot%20noir.%20I%20brought%20that%20to%20a%20simmer,%20and%20let%20it%20cook%20for%20about%2045%20minutes,%20to%20reduce%20the%20liquid%20some.%3C/p%3E%3Cp%3EI%20seasoned%20the%20chili%20with%20oregano,%20rosemary,%20dried%20cilantro,%20thyme,%20cumin,%20bay%20leaf,%20chili%20powder,%20pepper,%20and%20salt.%20I%20returned%20the%20pork%20to%20the%20pot,%20then%20put%20on%20the%20lid.%20I%20placed%20it%20into%20a%20280%20F%20oven,%20where%20it%20cooked%20slowly%20for%20three%20hours.%3C/p%3E%3Cp%3EAfter%20three%20hours,%20the%20pork%20was%20tender,%20and%20just%20starting%20to%20fall%20apart.%20The%20flavors%20had%20melded%20beautifully.%3C/p%3E%3Cp%3EStrawberry%20shortcake%20has%20always%20been%20a%20major%20comfort%20food%20for%20me.%20And,%20I%20mean%20real%20strawberry%20shortcake,%20not%20stale%20store%20bought%20sponge%20cake%20rounds.%20Proper%20shortcakes%20are%20scones%20or%20biscuits,%20maybe%20lightly%20sweetened.%3C/p%3E%3Cp%3EIt%20was%20a%20summer%20favorite%20my%20grandmother%20made.%20Sliced%20strawberries%20are%20macerated%20in%20a%20little%20sugar,%20to%20get%20them%20to%20release%20their%20own%20juices.%20The%20biscuits%20are%20soaked%20with%20lightly%20sweetened%20cream%20or%20half%20and%20half.%20It's%20a%20simple%20dessert,%20but%20one%20I%20adore.%3C/p%3E%3Cp%3EIn%20this%20case,%20I%20tried%20to%20elevate%20the%20dessert%20by%20adding%20a%20little%20kirschwasser%20to%20the%20strawberries%20and%20sugar%20as%20they%20macerated.%20I%20also%20added%20a%20little%20of%20the%20kirschwasser%20to%20the%20heavy%20cream,%20with%20a%20little%20sugar.%20I%20used%20a%20whisk%20to%20whip%20it%20until%20moderately%20thick,%20but%20stopped%20well%20before%20it%20reached%20even%20soft%20peaks.%3C/p%3E%3Cp%3EFor%20the%20biscuits,%20I%20used%20my%20basic%20scone%20recipe.%20The%20spouse%20had%20made%20them%20to%20take%20to%20work,%20and%20had%20more%20than%20she%20needed.%20She%20rolled%20them%20and%20cut%20them%20out,%20to%20the%20stage%20where%20they%20were%20ready%20to%20go%20into%20the%20oven.%20She%20then%20froze%20about%20half%20the%20batch.%20I%20pulled%20the%20frozen%20scones%20out,%20and%20placed%20them%20on%20an%20ungreased%20baking%20sheet.%20I%20baked%20them%20for%2020%20minutes%20in%20a%20375%20F%20oven,%20and%20they%20turned%20out%20just%20as%20nice%20as%20if%20they%20hadn't%20been%20frozen.%20This%20is%20actually%20good%20news%20for%20the%20business.%3C/p%3E%3Cp%3EI%20thought%20the%20kirschwasser%20added%20a%20nice%20touch.%20We%20both%20enjoyed%20the%20dessert%20very%20much.%3C/p%3E%3Cp%3EMix%20together%20all%20ingredients%20for%20coating%20flour.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20large%20enameled%20cast%20iron%20dutch%20oven%20over%20medium%20to%20medium%20high%20heat.%20Toss%20pork%20pieces%20in%20coating%20flour,%20shaking%20off%20excess.%20Sear%20pork%20pieces%20in%20the%20oil%20until%20brown%20on%20all%20sides.%20Remove%20from%20dutch%20oven,%20set%20aside.%3C/p%3E%3Cp%3EAdd%20onion%20and%20bell%20peppers%20to%20oil,%20cook%20until%20softened.%20Add%20fresh%20tomatoes,%20canned%20tomatoes,%20and%20wine.%20bring%20to%20a%20simmer,%20let%20cook%20for%20about%2045%20minutes,%20until%20somewhat%20reduced.%20Add%20herbs%20and%20spices,%20and%20return%20pork%20to%20the%20pot.%20Cover,%20place%20in%20a%20280%20F%20oven.%20Bake%20for%20three%20hours,%20until%20pork%20is%20tender.%3C/p%3E%3Cp%3EHappy%20Eating!%3C/p%3E){kind=link}
