Ingredientes

  • 3 large leeks (white and light green parts only)
  • 1 red onion, chopped
  • 8 garlic cloves, sliced
  • 1/4 cup extra virgin olive oil
  • salt
  • 1 pound of day-old, chewy bread such as French baguette
  • 1 1/2 pounds mixed leafy greens
  • juice of 1/2 lemon
  • freshly ground pepper
  • grated nutmeg
  • 3 cups whole milk, heated to simmering
  • 1/2 pound Cantal or Gruyere cheese
