Ingredientes

  • 2 x fresh red warm chili pepper, minced
  • 1/4 c. lime, juice
  • 2 Tbsp. extra virgin olive oil
  • 1/2 tsp cayenne pepper
  • 2 tsp chopped garlic
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp dry oregano
  • 2 x lime leaf, finely minced
  • 1/4 c. chicken stock
  • 1/4 c. coconut lowfat milk
  •     Chicken
  • 1 x smoked chicken, (about 1 1/2 lbs), meat removed from the bones and shredded
  •     Plantain
  • 2 Tbsp. extra virgin olive oil
  • 1 x 1 large plantain, peeled and sliced on the diagonal, 1/2-inch thick
  • 1 Tbsp. sugar
  •     Assembly
  • 4 x banana leaves
  • 4 sprg fresh coriander

Direcciones

  1. Combine the marinade ingredients in a food processor and blend into a smooth paste.
  2. Put the chicken in a non-reactive bowl and rub the marinade all over.
  3. Cover and chill overnight.
  4. Plantain:The next day, remove chicken from the refrigerator and bring to room temperature.
  5. Meanwhile, heat the extra virgin olive oil in a medium nonstick saucepan.
  6. Sprinkle the plantain with sugar and fry till golden brown and softened, about 2 min per side.
  7. Remove from the heat and set aside.
  8. Assembly:Heat a grill on medium-high heat.
  9. Divide the chicken among the banana leaves Top with the plantains and the coriander sprigs.
  10. Tie the banana leaves with kitchen twine, or possibly a banana leaf torn into strips.
  11. Put the pkgs. on the top shelf of the barbecue for 15 to 20 min, or possibly till chicken is warm.
  12. The smoked chicken steams in the banana leaves, keeping it ultra juicy. You can get banana leaves and plantains at Asian and Latin American supermarkets. They are usually found frzn in stores.
