Ingredientes

  • 1/3 c. fresh tangerine juice
  •     (or possibly orange juice)
  • 1/4 c. walnut oil
  •     (or possibly extra-virgin extra virgin olive oil)
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. raspberry vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp paprika
  • 1/2 tsp sugar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 5 x tangerines or possibly 3 oranges
  • 3 x heads Belgian endive trimmed, and
  •     thinly sliced crosswise
  • 3 c. bite-size pcs frisee lettuce
  • 3 c. bite-size pcs radicchio
  • 1 bn watercress thick stems trimmed
  • 4 ounce smoked duck breast cut thin strips
  •     (or possibly smoked turkey breast)
  • 1/2 x red onion thinly sliced
  •     into rings
  • 2/3 c. walnut halves toasted
  • 1/3 c. fresh pomegranate seeds

Direcciones

  1. Whisk first 9 ingredients in small bowl till well blended. Season dressing to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill. Bring to room temperature and whisk before using.)
  2. If using tangerines, remove peel; separate into segments. If using oranges, cut off peel and white pith; cut between membranes to release segments into bowl. Toss endive, frisee, radicchio, and watercress in large bowl with sufficient dressing to coat.
  3. Divide salad among 8 plates. Top each with smoked duck, onion rings, and tangerine or possibly orange segments. Sprinkle with walnuts and pomegranate seeds. Drizzle with some of remaining dressing.
  4. This recipe yields 8 servings.
