Smoked Lamb Chops With Herb Butter

Ingredientes

  • 4 x Lamb chops
  •     Salt and pepper
  •     Fresh mint, minced
  • 1 pch Rosemary
  • 100 ml Methylated spirits
  • 200 gm Butter
  • 20 gm Parsley, minced
  • 15 gm Chives, minced
  • 5 gm Tarragon
  • 5 gm Rosemary
  • 5 gm Basil
  • 5 gm Oregano
  • 1/2 tsp English mustard
  •     Salt and pepper

Direcciones

  1. Season the chops with the salt, pepper and rosemary. Seal the chops in a pan of warm oil. Place a sheet of tin foil on the grid, just sufficient to accommodate the chops. Place a layer of minced mint on the foil then place the chops on top and then another layer of mint on top of the chops. Smoke for about 4 min and then finish cooking in oven. Serve with herb butter. Butter must be at room temperature so as not to bring the temperature of the chops down
