%20on%20the%20vintage%20cooker%20and%20make%20some%20more%20coleslaw.%20%20%20(Although%20some%20beer%20was%20used%20by%20the%20smoking%20crew%E2%80%94there%20is%20none%20the%20recipe.)%3C/p%3E%3Cp%3EWe%20love%20our%20retro%20grill/smoker.%3C/p%3E%3Cp%3EPork%20butt%20is%20really%20the%20shoulder%20roast.%20%20%20Why%20is%20it%20called%20a%20butt%20then?%20%20%20I%20have%20no%20idea.%3C/p%3E%3Cp%3EWe%20don%E2%80%99t%20have%20a%20real%20recipe%20for%20our%20pork%20butt%20but%20I%20will%20try%20to%20jot%20something%20down%20for%20you.%3C/p%3E%3Cp%3E5-6%20lb.%20pork%20butt,%20pork%20shoulder,%20or%20pork%20sirloin%20roast%3C/p%3E%3Cp%3E1/3%20%20c.%20prepared%20yellow%20mustard%3C/p%3E%3Cp%3E1/4%20c.%20favorite%20dry%20rub%3C/p%3E%3Cp%3ERemove%20pork%20from%20refrigerator.%20%20%20Mix%20together%20mustard%20and%20dry%20rub.%20%20%20Score%20top%20layer%20of%20fat%20on%20pork%20roast.%3C/p%3E%3Cp%3EPorky,%20fatty%20goodness!%3C/p%3E%3Cp%3ERub%20ALL%20OVER%20pork.%3C/p%3E%3Cp%3ECovered%20with%20the%20mustard%20and%20spice%20rub%20mixture.%3C/p%3E%3Cp%3ELet%20pork%20set%20out%20for%2030%20minutes%20while%20grill%20is%20heating.%20%20%20%20Cook%20at%20250%20degrees%20unwrapped%20in%20smoker.%20%20%20%20%20%20Cook%20until%20a%20meat%20thermometer%20reads%20200%20degrees.%20%20%20(We%20cooked%20ours%20about%206%20hours.)%3C/p%3E%3Cp%3EWe%20used%20a%20small%20pork%20%20roast%20that%20we%20bought%20from%20our%20favorite%20family%20farmer%20at%20the%20FM,%20but%20some%20butts%20can%20weigh%20almost%2020%20pounds.%20%20%20%20If%20you%20have%20a%20bigger%20butt,%20make%20more%20mustard%20rub.%20%20%20(Did%20I%20really%20type%20that?)%3C/p%3E%3Cp%3EWhen%20we%20removed%20it%20from%20the%20cooker,%20it%20looked%20like%20a%20burnt%20offering.%3C/p%3E%3Cp%3EAn%20offering%20to%20the%20smoke%20gods.%3C/p%3E%3Cp%3ELook%20closer%20though,%20and%20you%20can%20see%20the%20crunchy,%20fatty%20goodness.%3C/p%3E%3Cp%3EMMMMM---Crunchy%20pork%20fat!%3C/p%3E%3Cp%3ELook%20even%20closer%20and%20you%20can%20see%20the%20smokey%20goodness!%3C/p%3E%3Cp%3EJust%20like%20we%20like%20it---falling%20apart%20with%20%22burnt%20ends.%22%3C/p%3E%3Cp%3EI%20wanted%20to%20capitalize%20on%20all%20that%20mustardy%20goodness%20so%20I%20revisited%20a%20previously%20posted%20recipe.%20%20%20A%20few%20weeks%20ago%20I%20was%20waxing%20poetic%20about%20coleslaw%20and%20I%20came%20across%20this%20recipe%20in%20an%20old%20cookbook.%20%20%20I%20posted%20the%20actual%20recipe%20earlier,%20but%20I%20whipped%20it%20up%20today%20to%20accompany%20this%20pork.%20%20%20%20Here%20it%20is%20again%20(with%20some%20revisions),%20an%20oldie%20and%20a%20goodie:%3C/p%3E%3Cp%3EHole-in-the-Wall%20Slaw%3C/p%3E%3Cp%3EInspired%20by%20Mrs.%20Hurley%20from%20Payne%20County%3C/p%3E%3Cp%3E1%20head%20cabbage,%20cleaned%20and%20cored%3C/p%3E%3Cp%3EQuarter%20cabbage.%20%20%20%20Run%20cabbage%20through%20a%20food%20processor%20with%20the%20slicing%20attachment.%20%20%20%20Do%20the%20same%20with%20the%20onion%20halves.%20%20%20%20%20Place%20in%20a%20large%20sealable%20bowl%20and%20mix%20together.%3C/p%3E%3Cp%3EPlace%20mustard,%20honey,%20sea%20salt,%20vinegar%20and%20pepper%20in%20a%20blender.%20%20%20Pulse%20until%20smooth%20and%20blended.%20%20%20%20Pour%20dressing%20over%20cabbage%20and%20onions.%20%20%20%20Chill%20for%208%20hours%20at%20least.%3C/p%3E%3Cp%3EI%20changed%20up%20the%20original%20recipe%20and%20added%20a%20red%20onion%20and%20added%20honey%20(instead%20of%20sugar)%20and%20cut%20the%20sweetness%20(and%20calories)%20by%2075%25.%20%20%20%20This%20is%20a%20tangy%20slaw.%20%20%20If%20I%20were%20really%20making%20a%20coney%20topping,%20I%20would%20have%20grated%20the%20cabbage%20and%20onion.%20%20%20%20(And%20this%20is%20fabulous%20on%20a%20smoked%20bratwurst%20in%20a%20homemade%20bun!)%3C/p%3E%3Cp%3EThe%20complete%20meal%20with%20a%20smoked%20potato.%20The%20verdict%20is%20still%20out%20on%20that%20potato.%3C/p%3E%3Cp%3EThanks%20to%20Erin%20at%20Big%20Fat%20Baker%20for%20hosting%20the%20Holiday%20Recipe%20Club!%20%20%20%20What%E2%80%99s%20the%20next%20holiday?%20%20%20That%20would%20be%20June%205%20for%20the%20Queen%E2%80%99s%20Diamond%20Jubilee.%20%20%20%20Toodle-oo!%3C/p%3E%3Cp%3E(Thanks%20also%20to%20these%20clubs%20for%20at%20least%20forcing%20me%20out%20of%20my%20%20hiatus!%20%20%20%20I%20hope%20to%20give%20you%20an%20update%20and%20get%20back%20to%20all%20my%20foodie%20friends%20after%20Memorial%20Day!%20%20%20Thanks%20for%20sticking%20with%20me!)%3C/p%3E){kind=link}
