Snowdon Pudding Served With Sherry Sauce

Ingredientes

  •     Pwdin yr wyddfa
  • 110 gm large seedless raisins
  • 230 x gfresh white breadcrumbs
  • 230 gm shredded suet (vegetable or possibly beef)
  • 40 gm cornflour
  • 170 gm soft light brown sugar
  •     The grated rind of 2 lemons
  • 170 gm lemon marmalade
  • 1 pch salt
  • 6 x Large eggs size 3 beaten
  • 1 x 1.151 pudding basin or possibly loaf tin baselined
  • 85 gm granulated sugar
  • 430 ml medium sherry
  • 110 gm butter or possibly margarine
  • 4 tsp flour

Direcciones

  1. Grease the basin and sprinkle a Tbsp. of the raisins in the base.
  2. Combine the remaining ingredients and mix well.
  3. Spoon into the basin.
  4. Cover and steam for 1 1/2 to 1 3/4 hrs till hard to the touch and cooked through. Turn out and serve with sherry sauce To make the sauce pare the lemon rind in strips using a vegetable peeler.
  5. Put into a pan with the sugar and 140 ml (1/4 pt) water.
  6. Heat slowly to dissolve the sugar then boil for 10 min till syrupy.
  7. Mix with the sherry.
  8. Heat the butter in another pan stir in the flour followed by the sherry mix.
  9. Bring to the boil stirring constantly then simmer for 1 minute.
  10. Strain and serve.
  11. Serves 8
