%20However%20it%20happened,%20it's%20officially%20MIA,%20so%20I'm%20sharing%20it%20again%20today,%20but%20revised%20just%20a%20tad.%20So%20I%20guess%20it's%20a%20good%20thing%20after%20all,%20b/c%20it%20gave%20me%20a%20chance%20to%20play%20around%20w/%20the%20recipe%20and%20make%20it%20even%20better!%20This%20is%20a%20soup%20I've%20been%20making%20since%20Adam%20and%20I%20were%20newlyweds,%20and%20one%20that%20family%20and%20friends%20have%20said%20they%20love%20too.%20It's%20got%20that%20one%20little%20ingredient%20that%20not%20only%20makes%20people%20say%20%22Hmmmm,%20what%20is%20that?%22%20That%20same%20addition%20also%20brightens%20up%20the%20flavor%20and%20makes%20it%20different%20from%20your%20everyday%20chicken%20soup.%20This%20is%20a%20great%20one%20to%20keep%20in%20the%20fridge%20and%20eat%20for%20days%20b/c%20it%20only%20gets%20better%20w/%20time.%20I%20like%20making%20a%20big%20pot%20of%20it%20for%20the%203%20of%20us%20for%20dinner,%20and%20then%20having%20it%20for%20lunch%20for%20the%20next%20several%20days,%20b/c%20it's%20not%20one%20that%20loses%20anything%20in%20the%20reheating%20process.%20For%20those%20of%20you%20in%20the%20working%20world,%20and%20packing%20your%20lunch%20each%20day,%20if%20you%20have%20access%20to%20a%20microwave,%20it's%20wonderful%20for%20that%20too.%20And%20I%20speak%20from%20experience%20b/c%20when%20we%20were%20first%20married%20and%20I%20was%20still%20working%2040%20hours%20a%20week,%20that's%20exactly%20what%20I%20did.%20Now%20if%20I'm%20not%20crazy%20and%20this%20was%20blogged%20at%20one%20point,%20for%20those%20who've%20read%20it,%20you'll%20notice%20the%20changes%20I've%20made.%20If%20I%20am%20nuts,%20or%20if%20you%20are%20reading%20it%20for%20the%20first%20time,%20it's%20a%20great%20recipe%20that%20I%20hope%20you%20enjoy!%3C/p%3E%3Cp%3ETo%20prepare%20chicken,%20place%20on%20a%20foil%20lined%20baking%20sheet.%20Drizzle%20w/%20olive%20oil%20and%20season%20w/%20salt%20and%20pepper.%20Roast%20in%20a%20350%20degree%20oven%20for%2030-45%20minutes%20until%20browned%20and%20cooked%20through.%20Let%20cool.%20Shred%20or%20cut%20into%20bite%20size%20pieces.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20combine%20carrots,%20onion%20and%20celery.%20Pulse%20until%20finely%20chopped.%20In%20a%20large%20pot,%20saute%20carrot%20mixture%20in%202%20TBS%20oil%20and%201%20TBS%20butter%20until%20tender.%20Add%20cooked%20chicken%20and%20cook%20until%20warmed%20through.%20Add%20stock,%20water%20and%20basil.%20Bring%20to%20a%20boil.%20Reduce%20heat%20to%20simmer%20and%20cook%2015%20minutes.%3C/p%3E%3Cp%3EAfter%20simmering%20for%2015%20minutes,%20add%20peas%20and%20egg%20noodles.%20Cook%20until%20noodles%20are%20tender,%20about%2010%20minutes.%20As%20the%20noodles%20cook,%20they%20will%20absorb%20the%20broth.%20Just%20add%20water%20if%20this%20happens%20too%20much.%20(Or%20have%20some%20extra%20broth%20on%20hand.)%20Right%20before%20serving,%20add%20lemon%20juice%20and%20stir%20to%20combine%20well.%3C/p%3E%3Cp%3E*NOTE*%20This%20is%20a%20great%20soup%20to%20do%20in%202%20parts.%20I%20start%20the%20soup%20and%20cook%20until%20simmering%20for%2015%20minutes.%20Then%20I%20turn%20off%20the%20heat,%20cover%20and%20let%20sit%20at%20room%20temperature.%20When%20it's%20time%20for%20supper,%20I%20continue%20on%20w/%20cooking%20the%20noodles,%20and%20dinner%20is%20ready%20in%20about%2015%20minutes.%20When%20reheating%20this%20soup,%20extra%20water%20is%20almost%20always%20needed%20due%20to%20the%20absorption%20of%20broth.%3C/p%3E%3Cp%3ESoup%20at%20Very%20Good%20Recipes%3C/p%3E%3Cp%3EPin%20It%3C/p%3E){kind=link}
