%20sugar%20for%20the%20white%20sugar%20because%20I%20prefer%20it.%20But%20I%20also%20happened%20to%20have%20a%20batch%20of%20salted%20caramel%20that%20had%20originally%20been%20planned%20for%20another%20project%20that%20never%20eventuated%E2%80%A6%20you%20can%20see%20where%20I%E2%80%99m%20going%20with%20this,%20right?%20After%20the%20store-bought%20toffee%20chips%20worked%20so%20well%20in%20the%20sweet%20potato%20blondies,%20I%20figured%20homemade%20caramel%20would%20work%20even%20better.%20After%20all,%20caramel%20and%20chocolate%20belong%20together.%3C/p%3E%3Cp%3EThe%20caramel%20actually%20mostly%20melted%20into%20the%20brownie%20as%20it%20baked,%20so%20there%20aren%E2%80%99t%20many%20%E2%80%9Cbits%E2%80%9D%20but%20it%E2%80%99s%20a%20total%20flavour%20bomb!%20And%20this%20is%20so%20not%20a%20brownie%20that%20you%20will%20pick%20up%20with%20your%20fingers%20to%20eat%20daintily.%20This%20is%20a%20fudgy,%20gooey%20mess%20of%20chocolate%20and%20caramel%20that%20you%20will%20scoop%20up%20with%20a%20fork%20and%20it%20will%20make%20you%20swoon%20and%20sigh%20and%20smile.%3C/p%3E%3Cp%3EThe%20caramel%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E140g%20granulated%20raw%20(golden)%20sugar%3C/p%3E%3Cp%3E65g%20whole%20cream,%20hot%3C/p%3E%3Cp%3E100g%20butter,%20cold,%20diced%3C/p%3E%3Cp%3Egenerous%20pinch%20sea%20salt%20flakes%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPut%20a%20piece%20of%20parchment%20on%20a%20baking%20sheet%20and%20lightly%20grease%20it%20with%20butter.%3C/p%3E%3Cp%3ESpread%20the%20sugar%20evenly%20across%20the%20bottom%20of%20a%20small,%20heavy-based%20saucepan.%20Heat%20over%20a%20medium-low%20flame%20without%20stirring%20until%20the%20sugar%20starts%20to%20melt%20and%20becomes%20liquid%20around%20the%20edges.%20Once%20about%20a%20quarter%20of%20it%20has%20melted,%20gently%20stir%20continuously%20with%20a%20wooden%20spoon%20until%20it%20starts%20to%20smoke,%20a%20few%20minutes%20depending%20on%20how%20high%20the%20heat%20is.%20Be%20careful%20not%20to%20burn%20it,%20using%20your%20nose%20as%20a%20guide.%20Using%20raw%20sugar%20for%20making%20caramel%20is%20a%20bit%20more%20haphazard%20than%20using%20white%20sugar%20where%20you%20go%20by%20colour,%20but%20just%20past%20smoking%20point%20is%20the%20aim.%3C/p%3E%3Cp%3ERemove%20from%20the%20heat%20and%20slowly%20add%20the%20butter%20and%20salt,%20stirring%20well%20with%20a%20wooden%20spoon%20until%20the%20butter%20has%20melted%20and%20the%20mixture%20is%20smooth.%3C/p%3E%3Cp%3EReturn%20to%20the%20heat%20and%20carefully%20and%20slowly%20pour%20the%20hot%20cream%20into%20the%20caramel,%20stirring%20continuously%20until%20it%20is%20smooth.%3C/p%3E%3Cp%3EPour%20onto%20parchment%20to%20cool%20and%20set.%20Transfer%20to%20the%20freezer%20to%20harden%20to%20make%20cutting%20easier.%3C/p%3E%3Cp%3EThe%20brownies%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ENote:%20I%20took%20100g%20mature%20starter,%20brought%20it%20to%20room%20temperature%20for%20an%20hour,%20fed%20it%20with%2060g%20each%20of%20flour%20and%20water%20and%20let%20it%20ferment%20for%203%20hours.%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPreheat%20oven%20to%20165%C2%B0C.%20Line%20a%20metal%2022%20x%2028cm%20baking%20pan%20with%20parchment%20paper,%20leaving%20some%20hanging%20over%20the%20long%20edges,%20and%20grease%20the%20paper%20with%20butter.%3C/p%3E%3Cp%3EIn%20a%20bowl%20placed%20over%20a%20saucepan%20with%20a%20couple%20of%20centimetres%20of%20water,%20melt%20the%20chocolate%20and%20butter,%20stirring%20frequently.%3C/p%3E%3Cp%3EPour%20the%20melted%20chocolate%20mixture%20into%20a%20large%20bowl.%3C/p%3E%3Cp%3EWhisk%20in%20the%20sugar,%20salt%20and%20vanilla.%3C/p%3E%3Cp%3EAdd%20the%20eggs%20one%20at%20a%20time,%20whisking%20to%20combine%20well%20after%20each%20addition.%3C/p%3E%3Cp%3ESift%20the%20cocoa%20powder%20over%20the%20chocolate%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3EAdd%20the%20starter%20and%20stir%20gently%20until%20it%20is%20completely%20incorporated.%3C/p%3E%3Cp%3ERun%20a%20sharp%20knife%20under%20hot%20water%20and%20cut%20the%20caramel%20into%20pieces%20about%202cm%20square.%3C/p%3E%3Cp%3EPour%20half%20of%20the%20batter%20into%20the%20prepared%20pan,%20spread%20the%20pieces%20of%20caramel%20evenly%20over%20the%20surface,%20then%20pour%20over%20the%20other%20half%20of%20the%20batter.%3C/p%3E%3Cp%3EBake%20for%20about%2045%20minutes,%20until%20a%20toothpick%20inserted%20in%20the%20centre%20comes%20out%20cleanish.%3C/p%3E%3Cp%3ECool%20in%20the%20pan%2020%20minutes,%20lift%20out%20using%20the%20parchment%20paper%20and%20allow%20to%20cool%20completely%20on%20a%20wire%20rack%20before%20cutting.%3C/p%3E%3Cp%3EEat.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
