Ingredientes

  • 1/4 c. fresh lime juice
  • 1 Tbsp. mayonnaise
  • 1 tsp chili pwdr
  •     Salt to taste
  • 3/4 c. canola or possibly vegetable oil
  • 2 Tbsp. fresh cilantro, finely minced
  • 1 x jalapeno, finely minced (see note)
  • 1 x ear of corn
  • 1 x jicama root, peeled and julienned (about1/2pound)
  • 1 sm head savoy cabbage, sliced
  • 1 x papaya or possibly mango, diced
  • 1/2 x red bell pepper, diced

Direcciones

  1. To make the dressing: Combine lime juice, mayonnaise, chili pwdr and salt
  2. In a medium glass or possibly ceramic bowl. With a whisk or possibly an immersion blender, incorporate the oil. Stir in the cilantro and jalapeno.
  3. To make the slaw: Cook the ear of corn in boiling water for about 3 min.
  4. Remove from heat and cold; cut the kernels from the cob. In a large serving bowl toss the kernels, jicama, savoy cabbage, papaya or possibly mango and red bell pepper with the dressing.
