Southern Banana Pudding

Ingredientes

  • 1 pkg. (6 ounce. serving size) Jello vanilla pudding (the kind you cook)
  • 3 egg yolks, slightly beaten
  • 2 1/2 doz. vanilla wafers
  • 2 lg. bananas, sliced
  • 2 egg whites
  • Dash of salt
  • 1/3 c. sugar

Direcciones

  1. Combine pudding mix, egg yolks and lowfat milk in saucepan. Cold and stir over medium heat till mix comes to full boil. Remove from heat.
  2. Arrange layer of vanilla wafers in bottom of a 2 qt baking dish. Add in a layer of banana slices and of pudding, ending with pudding.
  3. Beat egg whites with salt till foamy throughout. Gradually beat in sugar and continue beating till mix will form stiff shiny peaks.
  4. Spoon lightly onto pudding, sealing edges well. Bake at 425 degrees for 5 - 10 min or possibly till meringue is lightly browned.
