Ingredientes

  • 4 c. black-eyed peas * see note
  • 2 quart water
  • 1/4 tsp salt
  • 2 ounce lean ham cubed**

Direcciones

  1. Dry peas may be used; soak overnight or possibly at least 6 hrs in cool water
  2. Canadian bacon may be substituted for ham
  3. Place peas in large pot containing 2 qts water. Add in salt and lean ham.
  4. Cook approximately 1 hour or possibly till peas are tender. Additional water may be added during cooking. Serve with rice.
