%20with%20an%20appealing%20Cheese%20Balls%20appetizer.%20This%20Nashville%20cafe%20and%20temple%20to%20down%20home%20Southern%20cuisine%20is%20not%20known%20for%20its%20heart-healthy%20menu%20so%20much%20as%20its%20decadent%20deliciousness,%20so%20I%20wanted%20tone%20down%20the%20cholesterol%20and%20of%20course,%20make%20this%20recipe%20gluten-free.%3C/p%3E%3Cp%3EThe%20first%20incarnation%20of%20this%20recipe%20was%20tasty%20but%20not%20round.%3C/p%3E%3Cp%3EI%20used%20tapioca%20flour%20to%20replace%20the%20wheat%20flour%20in%20the%20original%20recipe%20and%20these%20babies%20flattened%20down%20to%20cookie%20height%20and%20had%20a%20texture%20like%20cheesy%20gummy%20bears.%20Not%20that%20this%20first%20batch%20had%20a%20long%20life%20span;%20they%20were%20wolfed%20down%20within%20a%20day%20by%20the%20family%20horde.%20Clearly,%20the%20tapioca%20flour%20had%20to%20be%20cut%20down%20and%20improved%20upon.%3C/p%3E%3Cp%3EMy%20second%20batch%20was%20a%20marked%20improvement%20and%20the%20recipe%20that%20I%20am%20pleased%20to%20share%20below.%20I%20cut%20the%20tapioca%20flour%20in%20half%20and%20added%20brown%20rice%20flour%20in%20its%20stead.%20Perfect!%20It%20added%20a%20crisper%20texture%20and%20certainly%20the%20Cheese%20Balls,%20while%20still%20not%20round,%20were%20a%20better%20texture.%20The%20trick%20is%20to%20keep%20them%20small%20(3/4%20inch%20diameter)%20so%20they%20don't%20spread%20out%20too%20much%20during%20baking%20and%20resemble%20a%20cookie%20more%20than%20a%20canape.%3C/p%3E%3Cp%3ESOUTHERN%20STYLE%20CHEESE%20CRISPS%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%20Blend%20butter%20and%20cheese%20together.%20Stir%20in%20tapioca%20and%20brown%20rice%20flours.%20Add%20remaining%20ingredients%20and%20mix%20well.%3C/p%3E%3Cp%3EShape%20into%20small%20balls%20(3/4%20inch%20diameter)%20and%20arrange%20on%20non-stick%20baking%20sheet.%20Bake%20in%20oven%2012-15%20minutes%20or%20until%20brown%20on%20bottoms.%20Cool%20on%20wire%20racks%20and%20hide%20from%20ravaging%20hordes.%3C/p%3E%3Cp%3EMakes%2060-70%20cheese%20crisps.%3C/p%3E){kind=link}
