Receta Southwest Salmon With Mango Salsa

- Preheat oven to 400 degrees. In a small bowl, mix chili pwdr, cumin, salt and pepper. Spread on waxed paper and dredge the fillet on the non-smooth side (the side which didn't have the skin).
- Select a large saute/fry pan which is oven-safe. In this pan, heat the extra virgin olive oil over high heat till it just begins to smoke. Cook the salmon, spiced side down for about 30 seconds, till crust forms.
- Turn salmon, spice side up and place in the oven for 5-7 min, taking care not to overcook - it should still look slightly translucent/soft. Cut the filet into serving portions, and garnish with mango salsa and cilantro sprigs.
