Receta Southwest Salmon With Mango Salsa

Ingredientes
- 1 lb fresh salmon fillet, no less than 1 inch thick, skin and bones
- Â Â removed
- 2 tsp chili pwdr
- 1 tsp grnd cumin
- Â Â Kosher or possibly sea salt to taste
- Â Â Freshly grnd black pepper
- 2 Tbsp. extra virgin olive oil
- Â Â Mango salsa (that see)
- Â Â Cilantro sprigs for garnish
Direcciones
- 1. Preheat oven to 400 degrees. In a small bowl, mix chili pwdr, cumin, salt and pepper. Spread on waxed paper and dredge the fillet on the non-smooth side (the side which didn't have the skin).
- 2. Select a large saute/fry pan which is oven-safe. In this pan, heat the extra virgin olive oil over high heat till it just begins to smoke. Cook the salmon, spiced side down for about 30 seconds, till crust forms.
- 3. Turn salmon, spice side up and place in the oven for 5-7 min, taking care not to overcook - it should still look slightly translucent/soft. Cut the filet into serving portions, and garnish with mango salsa and cilantro sprigs.
