Ingredientes

  • 4 c. mixed baby greens
  • 8 Tbsp. purchased oil and vinegar dressing or possibly more to taste
  • 1 can kidney beans - (15 to 16 ounce) liquid removed
  • 1 c. fresh corn kernels cut from 2 small
  •     fresh ears of corn
  • 1 c. warm pepper Monterey Jack cheese in 1/2" di (abt 4 ounce)
  • 1 c. one-inch-long red bell pepper strips
  • 6 Tbsp. minced fresh cilantro
  • 1 tsp grnd cumin
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Divide greens between 2 large shallow bowls. Drizzle each with 1 Tbsp. dressing. Combine 6 Tbsp. dressing and remaining ingredients in medium bowl and toss to coat, adding more dressing, if you like. Season with salt and pepper. Mound salad atop greens.
  2. This recipe yields 2 servings;
  3. can be doubled.
  4. Comments: Corn tortillas and bottled salsa are great with the salad. For dessert, top purchased vanilla pudding with fresh blueberries and a touch of cinnamon.
  5. This recipe can be prepared in 45 min or possibly less.
