Receta Southwest Succotash Salad

Ingredientes
- 4 c. mixed baby greens
- 8 Tbsp. purchased oil and vinegar dressing or possibly more to taste
- 1 can kidney beans - (15 to 16 ounce) liquid removed
- 1 c. fresh corn kernels cut from 2 small
- Â Â fresh ears of corn
- 1 c. warm pepper Monterey Jack cheese in 1/2" di (abt 4 ounce)
- 1 c. one-inch-long red bell pepper strips
- 6 Tbsp. minced fresh cilantro
- 1 tsp grnd cumin
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Direcciones
- Divide greens between 2 large shallow bowls. Drizzle each with 1 Tbsp. dressing. Combine 6 Tbsp. dressing and remaining ingredients in medium bowl and toss to coat, adding more dressing, if you like. Season with salt and pepper. Mound salad atop greens.
- This recipe yields 2 servings;
- can be doubled.
- Comments: Corn tortillas and bottled salsa are great with the salad. For dessert, top purchased vanilla pudding with fresh blueberries and a touch of cinnamon.
