Ingredientes

  • 10 ounce grnd turkey
  • 1/2 c. minced green onions plus
  • 2 Tbsp. minced green onions
  • 6 Tbsp. minced fresh cilantro
  • 2 tsp chopped canned chipotle chilies
  • 2 tsp grnd cumin
  • 2 x flour tortillas - (9" to 10" dia)
  • 4 Tbsp. purchased guacamole
  •     Purchased fresh salsa as needed

Direcciones

  1. Gently mix turkey, 1/2 c. green onions, 4 Tbsp. cilantro, chipotle chilies, and cumin in medium bowl. Form into two 7-inch-long by 2 1/2-inch-wide patties. (Can be made 8 hrs ahead. Cover and chill.)
  2. Prepare barbecue (medium-high heat). Grill burgers till cooked through, about 5 min per side. Wrap tortillas in foil; grill till heated through. Unwrap tortillas; transfer to 2 plates.
  3. Spread 2 Tbsp. guacamole down center of each tortilla. Place burgers atop guacamole. Sprinkle with 2 Tbsp. green onions and 2 Tbsp. cilantro. Fold each tortilla to partially enclose burger. Serve with salsa.
  4. This recipe yields 2 servings;
  5. can be doubled.
  6. Comments: Shredded iceberg lettuce topped with ranch dressing is the perfect side dish. End with scoops of lime sorbet drizzled with tequila and sprinkled with lime peel. Canned chipotle chilies are available at Latin American markets, specialty foods stores, and some supermarkets.
