Southwestern Alaska Cod Chowder

Ingredientes

  • 3 slc Bacon, cut into 1/4" pcs
  • 3/4 c. Minced onion
  • 1 x Clove garlic, chopped
  • 3/4 tsp Grnd cumin
  • 1/4 tsp Dry red pepper flakes
  • 2 Tbsp. All-purpose flour
  • 29 ounce Low-sodium chicken broth
  • 14 1/2 ounce Whole peeled tomatoes
  • 1/2 c. White wine
  • 1/2 x Green bell pepper *
  • 1/2 sm Sweet potato **
  • 1/2 lb Whitefish fillets ***
  • 3/4 c. Frzn corn kernels
  • 1 1/2 tsp Lime juice
  •     Pepper to taste
  •     Minced fresh cilantro

Direcciones

  1. Seeded and minced** peeled and cut into 1/2-inch cubes*** cod or possibly pollock, cut into 2-inch chunks
  2. Saute/fry bacon in a large saucepan over medium-high heat till crisp. Stir in onions, garlic, cumin and pepper flakes. Saute/fry 5 min, or possibly till onions are soft.
  3. Remove from heat and stir in flour. Cook 1 minute, stirring constantly, then gradually whisk in chicken broth.
  4. Stir in tomatoes, wine, bell pepper and sweet potato.
  5. Bring to a boil, reduce heat and simmer 10 min, or possibly till sweet potatoes are soft. Add in whitefish and corn; simmer 2 to 3 min, or possibly till whitefish flakes with a fork. Season with lime juice and pepper. Spoon into soup bowls and garnish with cilantro.
