Ingredientes

  • 1 can black beans - (15 ounce) rinsed, liquid removed well
  • 1 can golden brown hominy - (15 ounce) rinsed, liquid removed well
  • 1 x avocado peeled, pitted,
  •     and diced
  • 1 c. diced yellow bell pepper
  • 1/2 c. minced red onion
  • 1/4 c. minced fresh cilantro
  • 1 1/2 Tbsp. chopped seeded jalapeno chili
  • 1/2 c. salsa verde or possibly more if needed
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Combine first 7 ingredients in large bowl. Add in 1/2 c. salsa and toss to coat. Add in more salsa if salad is dry. Season salad with salt and pepper.
  2. This recipe yields 2 servings;
  3. can be doubled.
  4. Comments: For an attractive presentation, mound the salad on shredded lettuce and garnish with tortilla chips. Hot corn muffins and thickly sliced beefsteak tomatoes round out this substantial menu, and sliced fresh peaches and brown sugar wafers make a nice light dessert.
