Ingredientes

  • 1 c. uncooked bulghur wheat
  • 1 c. boiling water
  • 2 x tomatoes minced
  • 4 x green onions minced
  • 1 can black beans - (15 1/2 ounce) rinsed, liquid removed
  • 1/4 c. minced fresh cilantro
  • 1/2 tsp grated lime rind
  • 1/4 c. fresh lime juice
  • 2 Tbsp. extra virgin olive oil
  • 1/2 tsp grnd cumin
  • 1/2 tsp grnd red pepper
  • 1 can no-salt-added corn kernels - (8 3/4 ounce) liquid removed
  • 1/4 tsp salt

Direcciones

  1. Place bulghur in a large bowl, and add in 1 c. boiling water. Cover and let stand 30 min.
  2. Add in minced tomato and remaining ingredients to bulghur. Toss gently. Refrigerateup to 8 hrs.
