Receta Southwestern Tabbouleh Salad

Ingredientes
- 1 c. uncooked bulghur wheat
- 1 c. boiling water
- 2 x tomatoes minced
- 4 x green onions minced
- 1 can black beans - (15 1/2 ounce) rinsed, liquid removed
- 1/4 c. minced fresh cilantro
- 1/2 tsp grated lime rind
- 1/4 c. fresh lime juice
- 2 Tbsp. extra virgin olive oil
- 1/2 tsp grnd cumin
- 1/2 tsp grnd red pepper
- 1 can no-salt-added corn kernels - (8 3/4 ounce) liquid removed
- 1/4 tsp salt
Direcciones
- Place bulghur in a large bowl, and add in 1 c. boiling water. Cover and let stand 30 min.
- Add in minced tomato and remaining ingredients to bulghur. Toss gently. Refrigerateup to 8 hrs.
