Southwestern Waffles

What happens when salsa meets waffles? Fusion cuisine - a marriage of unexpected culinary elements! I was skeptical of how good this might be and was prepared to grab the agave nectar or honey and some butter just in case. But it was very good just as it is. If you like waffles and you like salsa, you'll probably like them together!

Ingredientes

  • SALSA:
  • 2 medium tomatoes
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped green and/or red bell pepper
  • 2 tablespoons chopped cilantro
  • 1 to 2 tablespoons lemon or lime juice
  • 1 tablespoon minced jalapeno pepper (optional or to taste)
  • WAFFLES:
  • 2 cups flour (may use part whole wheat)
  • 2 tablespoons sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/4 cups milk
  • 3 tablespoon cooking oil
  • 1/4 cup shredded mozzarella or cheddar cheese (optional)

Direcciones

  1. SALSA:
  2. Combine tomatoes, onion, bell peppers, cilantro, lemon juice, jalapeno pepper (optional). Remove 2/3 cup salsa and set aside. Cover remaining salsa and refrigerate til serving time.
  3. WAFFLES:
  4. Heat waffle iron to desired temperature.
  5. Combine flour, sugar, baking soda, baking powder and salt; mix well.
  6. Whisk egg well; add milk, oil and reserved 2/3 cup salsa until blended. Stir in flour ingredients and mix just until moistened.
  7. Oil or spray waffle iron if required. Pour about 1 cup batter onto surface of grid or amount depending on size of waffle iron. Close lid and bake to desired doneness.
  8. Cut waffles in half diagonally. Arrange on plate and top with salsa (and optional shredded cheese.)
