%20and%20there%20was%20no%20cucumber%20anywhere.%20%20%20%20But%20Pork%20ribs%20were%20on%20sale%20and%20the%20frugal%20person%20that%20I%20am,%20I%20elected%20to%20try%20making%20ribs%20instead%20of%20using%20tenderloin.%3C/p%3E%3Cp%3EAfter%20harvesting%20fresh%20mint%20leaves%20and%20parsley%20from%20my%20garden,%20and%20using%20a%20Meyer%20Lemon%20I'd%20also%20grown,%20I%20was%20ready.%20%20%20So%20I'm%20bragging%20a%20little%20here,%20it%20was%20such%20a%20kick%20to%20go%20outside%20and%20pick%20what%20I%20needed%20from%20my%20little%20container%20garden.%20%20%20Can't%20get%20much%20fresher%20than%20that.%3C/p%3E%3Cp%3EMinced%20them%20up%3C/p%3E%3Cp%3EMix%3C/p%3E%3Cp%3Eall%20the%20ingredients%20up%20for%20the%20marinade%20and%20baste%20or%20pour%20over%20the%3C/p%3E%3Cp%3Eribs,%20let%20the%20meat%20side%20of%20the%20ribs%20sit%20in%20the%20marinade%20for%20at%20least%20one%3C/p%3E%3Cp%3Ehour%20at%20room%20temp,%20or%20if%20you%20have%20the%20fridge%20space,%20in%20the%20fridge%3C/p%3E%3Cp%3Eovernight.%3C/p%3E%3Cp%3EI%20got%20my%20ribs%20out,%20made%20the%20marinade,%20actually%20I%20increased%20the%20amounts%20cause%20I%20had%20a%20couple%20of%20racks%20of%20ribs%20to%20cover%20with%20the%20marinade.%20%20%20%20I%20brushed%20on%20the%20marinade%20on%20the%20front%20and%20back%20of%20the%20ribs,%20set%20them%20meat%20side%20down%20on%20some%20cooking%20sheets%20and%20let%20them%20rest%20at%20room%20temperature%20for%20an%20hour.%3C/p%3E%3Cp%3EPlaced%20the%20ribs%20in%20a%20325%20deg.%20oven,%20covered%20with%20foil%20for%20an%20hour,%20then%20took%20them%20out,%20flipped%20them%20over%20so%20that%20the%20meat%20side%20was%20down%20into%20the%20marinade%20and%20baked%20them%20for%20another%20hour.%20%20%20Took%20the%20foil%20off,%20and%20let%20them%20cook%20for%20about%2030%20minutes%20at%20350%20degrees,%20then%20flipped%20them%20over%20again,%20and%20let%20them%20bake%20meat%20side%20up%20for%20another%2045%20minutes.%20%20%20By%20which%20time%20the%20fragrance%20wafting%20from%20the%20oven%20was%20driving%20me%20crazy,%20so%20I%20cut%20a%20piece%20of%20the%20meat%20and%20tasted%20it.%3C/p%3E%3Cp%3ETender,%20flavourful%20and%20a%20hit,%20at%20least%20with%20me.%3C/p%3E%3Cp%3EWhile%20they%20were%20roasting%20I%20made%20the%20Tzatziki%20sauce.%20%20%20I've%20only%20had%20Tzatziki%20with%20lots%20of%20cucumber%20and%20garlic,%20but%20this%20recipe%20didn't%20have%20any%20cucumber%20or%20garlic.%20%20%20%20So%20I%20again,%20went%20into%20my%20garden%20and%20picked%20some%20more%20mint%20and%20parsley,%20(the%20plants%20should%20recover,%20hopefully)%20%20and%20made%20up%20the%20sauce.%20%20%20And%20you%20know,%20you%20didn't%20miss%20the%20cucumber%20or%20garlic.%20%20%20%20And%20when%20I%20served%20it,%20I%20forgot%20to%20put%20out%20the%20Srircha%20sauce.%20%20grrrr.%20%20%20Just%20means%20more%20for%20me%20later%20on,%20so%20it%20wasn't%20all%20bad.%3C/p%3E%3Cp%3ETzatziki%3C/p%3E%3Cp%3E1%20cup%20plain%20Greek%20Style%20Yoghurt%3C/p%3E%3Cp%3E1/4%20cup%20chopped%20fresh%20parsley%3C/p%3E%3Cp%3E1/4%20cup%20chopped%20fresh%20mint%20leaves%3C/p%3E%3Cp%3E1%20tablespoon%20minced%20lemon%20zest%20(I%20used%20my%20microplane%20on%20the%20lemons%20I'd%20used%20for%20the%20marinade)%3C/p%3E%3Cp%3E1%20tablespoon%20EVOO,%20(OK,%20so%20I%20eyeballed%20it%20a%20little%20here)%3C/p%3E%3Cp%3E1%20teaspoon%20Honey%20(make%20sure%20you%20get%20real%20honey)%3C/p%3E%3Cp%3EMix%20together%20and%20refrigerate%20until%20the%20ribs%20are%20done.%3C/p%3E%3Cp%3EServe%20with%20some%20warmed%20flatbread%20or%20Naan.%3C/p%3E%3Cp%3EI%20think%20it%20was%20a%20success,%20cause%20there%20were%20two%20paltry%20ribs%20left%20at%20the%20end%20of%20the%20night,%20but%20I%20ate%20them%20for%20breakfast%20the%20next%20morning.%20%20%20So%20they%20didn't%20go%20to%20waste%20at%20all.%3C/p%3E){kind=link}
