Soy Seared Tuna With Orange Sauce

Ingredientes

  • 1 x Onion, sliced
  • 1/2 c. Soy sauce
  • 2 Tbsp. Sugar
  • 1 Tbsp. Ginger
  • 1 lb Green beans, trimmed
  • 1/2 c. Chicken broth
  • 1 tsp Curry pwdr (1 to 2)
  • 1 x Orange
  • 1 x Habanero peppers, diced small
  • 1 x Yellow squash, cut in half lengthwise and sliced into half moons
  • 1 x Tuna steak
  •     Extra virgin olive oil
  •     Salad greens

Direcciones

  1. Saute/fry onion till browned and caramelized.
  2. Boil soy sauce with sugar and ginger for glaze.
  3. Place green beans in boiling water till color ripens, then remove.
  4. To chicken broth, add in curry pwdr and juice of the orange into broth. Add in diced habaneros to broth.
  5. Add in sliced squash to caramelized onions.
  6. Saute/fry tuna in extra virgin olive oil 5-8 min on each side, then pour soy glaze onto it before removing from pan.
  7. Sauce plate with orange sauce first, then place squash and onions on a bed of greens, the tuna steak being the final addition.
