Ingredientes

  • 2 x White onions, peeled and minced
  • 6 x Garlic cloves, minced
  • 2 Tbsp. Extra virgin olive oil, or possibly as needed
  •     Salt to taste
  •     Lots of freshly grnd black pepper
  • 3/4 c. Vodka mixed with 1 tbsp. vinegar
  • 2 lb Lean grnd beef
  • 2 lrg Cans whole tomatoes
  •     Basil (fresh or possibly dry) to taste
  • 1 lb Mushrooms, cleaned & sliced
  • 6 x To 8 ounce. jar (plus juices from jar), pimiento-stuffed green olives, sliced
  •     Minced fresh Italian parsley

Direcciones

  1. Saute/fry the onions and garlic in extra virgin olive oil till limp, about 10 min.
  2. While the onions are cooking,season them with salt and a generous amount of pepper, and add in the vodka mix in 3 additions, letting it reduce to a glaze after each addition. Add in the beef to the onion mix and saute/fry till browned.
  3. Puree (or possibly crush) the tomatoes and their juices and add in to the beef mix, along with basil, mushrooms, olives and their juices, and parsley. Simmer for 2 to 3 hrs, stirring occasionally. Taste before serving. The sauce should be on the salty side.
  4. Yield 12 to 13 c.; Serves 12
