.%20These%20multi-coursed%20marathons%20are%20mandatory%20this%20time%20of%20year.%20After%20all,%20standing%20rib%20roasts%20are%20once-a-year%20affairs%20(at%20least%20in%20my%20house).%20Don%E2%80%99t%20get%20me%20wrong,%20I%E2%80%99m%20not%20complaining.%20I%E2%80%99m%20looking%20forward%20to%20all%20the%20exuberance.%20Really%20I%20am.%20But%20sometimes%20you%E2%80%99ve%20just%20got%20to%20give%20yourself%20a%20breather%20with%20the%20gift%20of%20a%20quiet%20dinner%20at%20home%20with%20special%20friends%20or%20maybe%20just%20that%20one%20special%20someone.%20After%20all,%20the%20season%20is%20meant%20to%20be%20enjoyed.%20A%20quiet,%20simple%20meal%20is%20one%20of%20my%20favorite%20ways%20to%20celebrate.%3C/p%3E%3Cp%3EAnother%20way%20I%20know%20the%20holidays%20are%20fast%20approaching%20is%20the%20state%20of%20my%20wine%20cellar.%20It%20always%20seems%20that%20by%20December%20there%20quite%20a%20few%20special%20bottles%20of%20wine%20stacking%20up%E2%80%93%20and%20they%20start%20calling%20my%20name.%3C/p%3E%3Cp%3ESome%20will%20be%20cellared%20more%20deeply%20(where%20I%20can%E2%80%99t%20hear%20them),%20some%20may%20find%20their%20way%20under%20the%20Christmas%20trees%20of%20close%20friends.%20The%20loudest%20chorus%20comes%20from%20wines%20that%20were%20set%20aside%20in%20previous%20years%20for%20a%20glamorous%20evening%20spent%20with%20a%20rib%20roast%20or%20the%20like.%20But%20some%20sing%20so%20sweetly%20that%20I%20just%20know%20they%E2%80%99re%20destined%20to%20be%20enjoyed%20on%20a%20quiet%20evening%20at%20home.%3C/p%3E%3Cp%3EWine%20Pairing%20%20Lula%20Cellars%202012%20Costa%20Vineyard%20Pinot%20Noir%3C/p%3E%3Cp%3EThere%E2%80%99s%20no%20meat%20in%20Greg%E2%80%99s%20Farro%20and%20Spaghetti%20Squash%20Salad,%20it%E2%80%99s%20purely%20vegetarian.%20So%20my%20first%20thought%20when%20he%20asked%20me%20for%20a%20wine%20suggestion%20was%20to%20find%20an%20interesting%20expression%20of%20the%20Sauvignon%20Blanc%20or%20Chardonnay%20grape.%20But%20then%20I%20remembered%20something%20that%20Evan%20Goldstein,%20author%20of%20%E2%80%9CPerfect%20Pairings%E2%80%9D%20wrote:%20%E2%80%9CPinot%20Noir%20%E2%80%A6%20is%20[%E2%80%A6]%20Ken%20Eskenazi%20Price%20$45%20Pairs%20well%20with%20grilled%20salmon,%20seared%20duck%20breast,%20and%20grilled%20lamb%20chops%3C/p%3E%3Cp%3EIt%E2%80%99s%20these%20moments%20that%20I%20like%20to%20make%20something%20simple%20to%20highlight%20the%20special%20wine%20I%E2%80%99ve%20chosen%20for%20quieter%20evenings.%20Just%20because%20a%20wine%20is%20special%20(or%20even%20quite%20expensive)%20doesn%E2%80%99t%20necessarily%20mean%20I%20need%20to%20reach%20too%20deeply%20into%20my%20culinary%20bag%20of%20tricks%20to%20do%20the%20wine%20justice.%20Holidays,%20aside,%20I%20wouldn%E2%80%99t%20want%20to%20make%20a%20meal%20that%20struts%20all%20over%20the%20special%20qualities%20of%20a%20special%20wine%20I%E2%80%99ve%20been%20looking%20forward%20to%20sampling.%3C/p%3E%3Cp%3ESpaghetti%20Squash%20Salad%20and%20Lula%20Cellars%20Pinot%20Noir%3C/p%3E%3Cp%3EThis%20Farro%20and%20Spaghetti%20Squash%20Salad%20is%20the%20perfect%20example%20of%20a%20the%20kind%20of%20simple%20meal%20that%20deserves%20a%20special%20wine.%20It%E2%80%99s%20studded%20with%20little%20jewel%20like%20dried%20cranberries%20which%20gives%20the%20salad%20its%20holiday%20flair%20and%20makes%20eating%20it%20by%20the%20Christmas%20tree%20seem%20like%20the%20right%20thing%20to%20do.%20The%20pomegranate%20juice%20in%20the%20dressing%20carries%20the%20weight%20of%20the%20nutty%20farro%20nicely.%20There%E2%80%99s%20barely%20any%20vinegar%20in%20the%20dressing,%20which%20means%20the%20Lula%20Cellars%202012%20Costa%20Vineyard%20Pinot%20Noir%20doesn%E2%80%99t%20have%20to%20work%20too%20hard%20to%20out%20swagger%20the%20salad.%20I%20also%20need%20to%20mention%20that%20the%20spaghetti%20squash%20I%20used%20for%20this%20special%20meal%20was%20grown%20right%20on%20the%20same%20property%20in%20the%20Anderson%20Valley%20as%20the%20grapes%20in%20the%20pinot%20noir.%20I%E2%80%99m%20not%20saying%20I%20stole%20it%20(exactly).%20But%20they%20were%20born%20to%20be%20together.%3C/p%3E%3Cp%3ENow%20go%20ahead%20and%20breath.%20Enjoy%20the%20holidays.%20I%20hope%20you%20can%20put%20aside%20some%20time%20for%20a%20quiet%20dinner%20at%20home.%20I%E2%80%99m%20sure%20glad%20I%20did.%20GREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ETo%20prepare%20the%20vinaigrette:%20Pour%20the%20pomegranate%20juice%20into%20a%20small%20pot%20and%20place%20over%20medium-low%20heat.%20Add%20the%20honey%20and%20cook%20until%20the%20juice%20has%20reduced%20to%20%C2%BC%20cup%20and%20is%20thick%20and%20syrupy,%20roughly%2010%20minutes.%20Set%20aside%20to%20cool.%3C/p%3E%3Cp%3EIn%20a%20small%20mixing%20bowl%20or%20mason%20jar,%20combine%20the%20cooled%20pomegranate%20syrup,%20shallot,%20garlic,%20vinegar,%20lemon%20juice,%20and%20oil;%20season%20lightly%20with%20salt%20and%20pepper.%20Whisk%20or%20shake%20to%20blend%20and%20dissolve%20the%20salt;%20reserve%20at
