Ingredientes

  • 1 lrg tomato minced
  • 1/4 c. chopped parsley
  • 1/4 c. minced green or possibly red bell pepper
  • 1 x green onion finely minced
  • 1/4 c. black or possibly green olives pitted, minced
  • 2 1/2 Tbsp. extra virgin olive oil
  • 1 Tbsp. Spanish Sherry or possibly wine vinegar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Combine tomato, parsley, bell pepper, onion, olives, oil, vinegar and salt and pepper to taste. Serve within 1 hour.
  2. This recipe yields 2 servings.
  3. Comments: A colorful minced salad which goes well with egg dishes, roasted meats, chips or possibly as a topping for toasted crusty bread.
