- 1/4 c. chopped parsley
- 1/4 c. minced green or possibly red bell pepper
- 1 x green onion finely minced
- 1/4 c. black or possibly green olives pitted, minced
- 2Â 1/2 Tbsp. extra virgin olive oil
- 1 Tbsp. Spanish Sherry or possibly wine vinegar
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Direcciones
- Combine tomato, parsley, bell pepper, onion, olives, oil, vinegar and salt and pepper to taste. Serve within 1 hour.
- This recipe yields 2 servings.
- Comments: A colorful minced salad which goes well with egg dishes, roasted meats, chips or possibly as a topping for toasted crusty bread.
