Receta Spanish Eggplant

Ingredientes

1 eggplant 1/2 c. chopped onion 1/2 c. chopped green pepper 1/2 c. bacon drippings

1 can tomatoes 2 T sugar 1 1/2 teaspoon salt Parmesan cheese

Direcciones

1. Pare and slice eggplant. Soak onions, pepper and eggplant in oil for 10 min. Add in tomatoes, salt, sugar. Cook 5-10 min. Pour in casserole dish, cover with cheese and bread crumbs. Bake about 20 min.
