Receta Spanish Eggplant

Ingredientes
- 1 eggplant
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. bacon drippings
- 1 can tomatoes
- 2 T sugar
- 1 1/2 teaspoon salt
- Parmesan cheese
Direcciones
- Pare and slice eggplant. Soak onions, pepper and eggplant in oil for 10 min. Add in tomatoes, salt, sugar. Cook 5-10 min. Pour in casserole dish, cover with cheese and bread crumbs. Bake about 20 min.
