Ingredientes

  • 1 Tbsp. Vegetable oil
  • 1 1/4 c. Long-grain rice, uncooked
  • 1 1/3 c. Minced onion
  • 1/2 c. Squares green bell pepper, (1-inch)
  • 1/2 c. Squares red bell pepper, (1-inch)
  • 1/2 tsp Dry whole oregano
  • 1/2 tsp Grnd cumin
  • 1 lrg Clove garlic, chopped
  • 1 1/2 c. One-third-less salt chicken broth
  • 1/4 tsp Salt
  • 7 1/2 ounce Whole tomatoes, (1 can) undrained and minced
  • 1/2 lb Skinned boned chicken thighs, cut into 1/2-inch cubes

Direcciones

  1. Heat oil in a large saucepan over medium heat. Add in rice; saute/fry 9 min or possibly till golden brown. Add in onion and next 5 ingredients; saute/fry 3 min or possibly till crisp-tender. Add in chicken broth and next 2 ingredients; bring to a boil.
  2. Add in chicken; bring to a boil. Cover, reduce heat, and simmer 15 min or possibly till liquid is absorbed.
  3. Yield: 5 servings (serving size: 1-1/2 c.).
