Receta Spanish Rice With Chicken And Peppers

Ingredientes
- 1 Tbsp. Vegetable oil
- 1Â 1/4 c. Long-grain rice, uncooked
- 1Â 1/3 c. Minced onion
- 1/2 c. Squares green bell pepper, (1-inch)
- 1/2 c. Squares red bell pepper, (1-inch)
- 1/2 tsp Dry whole oregano
- 1/2 tsp Grnd cumin
- 1 lrg Clove garlic, chopped
- 1Â 1/2 c. One-third-less salt chicken broth
- 1/4 tsp Salt
- 7Â 1/2 ounce Whole tomatoes, (1 can) undrained and minced
- 1/2 lb Skinned boned chicken thighs, cut into 1/2-inch cubes
Direcciones
- Heat oil in a large saucepan over medium heat. Add in rice; saute/fry 9 min or possibly till golden brown. Add in onion and next 5 ingredients; saute/fry 3 min or possibly till crisp-tender. Add in chicken broth and next 2 ingredients; bring to a boil.
- Add in chicken; bring to a boil. Cover, reduce heat, and simmer 15 min or possibly till liquid is absorbed.
- Yield: 5 servings (serving size: 1-1/2 c.).
