Spanish Vegetable Hotpot

Ingredientes

  • 2 Tbsp. Extra virgin olive oil
  • 1 lrg Spanish onion
  • 3 x Cloves garlic, crushed
  • 450 gm Potatoes, peeled and cut into chunks
  • 2 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Turmeric
  • 150 gm Green beans, trimmed and halved
  • 1 x 440 g can chick peas, liquid removed and rinsed
  • 1 x 440 g can minced tomatoes
  • 1 lrg Pear, peeled and sliced
  • 150 ml Vegetable stock
  •     Salt and freshly grnd black pepper

Direcciones

  1. In a large pan, heat the oil then add in the onion and garlic and fry slowly till the onion turns golden.
  2. Add in the potatoes and spices and continue cooking for 1 minute.
  3. Stir in the remaining ingredients, season to taste, cover and leave to for 30-35 min, stirring the potatoes are cooked.
  4. Serve immediately.
