Receta Spanish Vegetable Hotpot

Ingredientes
- 2 Tbsp. Extra virgin olive oil
- 1 lrg Spanish onion
- 3 x Cloves garlic, crushed
- 450 gm Potatoes, peeled and cut into chunks
- 2 tsp Paprika
- 1 tsp Cumin
- 1 tsp Turmeric
- 150 gm Green beans, trimmed and halved
- 1 x 440 g can chick peas, liquid removed and rinsed
- 1 x 440 g can minced tomatoes
- 1 lrg Pear, peeled and sliced
- 150 ml Vegetable stock
- Â Â Salt and freshly grnd black pepper
Direcciones
- 1. In a large pan, heat the oil then add in the onion and garlic and fry slowly till the onion turns golden.
- 2. Add in the potatoes and spices and continue cooking for 1 minute.
- 3. Stir in the remaining ingredients, season to taste, cover and leave to for 30-35 min, stirring the potatoes are cooked.
- 4. Serve immediately.
