Spiced Balsamic Apples With Black Pudding And Braised Cabbage

Ingredientes

  • 1 med red cabbage halved cored and cut into large chunks, leaves separated
  • 13 sm shallots peeled
  • 2 clv garlic peeled and crushed
  • 1/2 tsp crushed cloves
  • 1/2 tsp cinnamon pwdr
  • 1/2 tsp grnd allspice
  •     good grating nutmeg
  • 2 Tbsp. light muscovado sugar
  • 2 Tbsp. apple or possibly cranberry jelly
  • 3 Tbsp. balsamic vinegar
  • 30 gm butter softened
  • 1 x salt and black pepper
  • 8 sm apples or possibly 3 large apples sliced into thick wedges
  • 4 sm black puddings (or possibly sausages if you prefer)

Direcciones

  1. Preheat the oven to 150C/300F/Gas Mark 2.
  2. In a heavy casserole pan mix together all the ingredients except the apples and black pudding. Add in 3 tbsp water and season well.
  3. Cover and cook in the oven for 2 hrs stir the cabbage a couple of times during cooking to distribute the spice and buttery juices.
  4. Fold the apples into the cabbage half an hour before the end.
  5. When ready to serve fry the black pudding till cooked and crusted all over.
  6. If the cabbage is not quite ready put the pudding in the casserole on toy of the cabbage to keep hot.
  7. Serve the black pudding sliced on top of the apple and cabbage.
  8. Mustard mash would be a good accompaniment.
  9. If you're not a fan of black pudding use other sausages instead. The apple cabbage is also good with roast duck or possibly pork.
