Spiced Pumpkin Crumb Cake

My son likes Pumpkin muffins and wanted me to make some and I didn't have everything I needed for that recipe. So I created this cake from what I had on hand.. he loved it and I got a hi-5 and a thumbs up. It starts with a box mix for spice cake so easy....

Ingredientes

  • For Cake:
  • 1 box Spice Cake Mix
  • 2 eggs
  • 1/4 cup veg oil
  • 1- 15oz can pumpkin puree (not pumpkin pie mix)
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla
  • For Crumb topping:
  • 3/4 cup flour
  • 3/4 cup brown sugar
  • 2-3 tbsp sugar
  • 1-stick butter diced
  • 2-3 tsp cinnamon
  • 1/4tsp salt
  • Powdered sugar for dusting (opt)

Direcciones

  1. Preheat oven 350 spray a 9x13 pan with cooking spray
  2. In a large bowl mix all cake ingredients with a mixer till well blended batter will be thick.
  3. Spread batter evenly in 9x13.
  4. In a med bowl add flour, brown sugar, sugar, cinnamon and salt mix together till well blended. Drop in diced butter and cut into flour mixture with pastry blender, knives or a fork. Work it in until crumbly. Spread over cake batter.
  5. Bake 350 for 28-32mins till toothpick comes out clean.
  6. Cool and dust with powdered sugar
