Ingredientes

  • 1 med Onion -- minced
  • 4 x Cloves garlic -- chopped
  • 2 Tbsp. Extra virgin olive oil
  • 1 x 15 ounce black beans, canned --
  •     Rinsed and liquid removed
  • 1 x 14 1/2 ounce Mexican tomatoes,
  •     Canned, stewed
  • 1/4 tsp Red pepper -- grnd
  • 2 c. Rice, cooked -- Warm
  • 1/4 c. Onion -- minced

Direcciones

  1. In a medium saucepan cook 1/2 c. onion and garlic in warm oil until tender but not brown. Carefully stir in the liquid removed beans, undrained tomatoes, and grnd red pepper. Bring to a boil; reduce heat. Simmer, uncovered, for 15 min.
  2. To serve, mound rice on individual plates; make a well in the centers.
  3. Spoon black bean mix into centers. If you like, sprinkle with minced onion.
