Spicy Calamares Adobo with Coconut Milk

One of my favorite dish since i was young. I made a bit of tweaking from the traditional recipe. Enjoy!

Ingredientes

  • 1 kilo medium calamari/squid, washed cleaned
  • 1 cup coconut milk
  • 1 med onion, sliced
  • 3 cloves garlic, diced
  • 1/4 cup cane vinegar
  • 2 tbsp soy sauce
  • 2 pcs red chilies, sliced
  • pepper
  • olive oil

Direcciones

  1. Put the cleaned squid in a deep pot.
  2. Add the garlic, onion, soy sauce, vinegar, and pepper.
  3. Mix well.
  4. Add half cup of the coconut milk.
  5. Turn on heat and Let it simmer on medium heat.
  6. Once it starts to boil, lower heat and let it simmer until it reduces the liquid.
  7. Once almost dry, stir in the remaining coconut milk and chilies.
  8. Bring to a boil, simmer for a couple of minutes and turn off heat.
  9. Drizzle with olive oil before serving.
