Receta Spicy Calamares Adobo with Coconut Milk
One of my favorite dish since i was young. I made a bit of tweaking from the traditional recipe. Enjoy!

Ingredientes
- 1 kilo medium calamari/squid, washed cleaned
- 1 cup coconut milk
- 1 med onion, sliced
- 3 cloves garlic, diced
- 1/4 cup cane vinegar
- 2 tbsp soy sauce
- 2 pcs red chilies, sliced
- pepper
- olive oil
Direcciones
- Put the cleaned squid in a deep pot.
- Add the garlic, onion, soy sauce, vinegar, and pepper.
- Mix well.
- Add half cup of the coconut milk.
- Turn on heat and Let it simmer on medium heat.
- Once it starts to boil, lower heat and let it simmer until it reduces the liquid.
- Once almost dry, stir in the remaining coconut milk and chilies.
- Bring to a boil, simmer for a couple of minutes and turn off heat.
- Drizzle with olive oil before serving.
