%20%20is%20one%20of%20my%20favourite%20side%20dish.%20In%20English,%20the%20plant%20has%20sometimes%20been%20called%20Chinese%20potato,%20Coleus%20potato,%20Hausa%20potato,%20or%20Fra-Fra%20potato.%20It%20is%20also%20referred%20to%20as%20%22native%20potato%22%20and%20%22country%20potato%22%20.In%20Malay%20it%20is%20called%20as%20ubi%20kembili%20.One%20can%20hardly%20find%20this%20potato%20%20in%20Malaysia,%20but%20is%20available%20in%20Ayer%20Hitam,Johor.So%20whenever%20%20friends%20or%20relatives%20past%20by%20there%20,they%20will%20buy%20and%20distribute%20it%20around%20.Recently%20,%20I%20visited%20my%20parents%20and%20dad%20passed%20me%20some%20koorka.I%20was%20happy%20and%20introduced%20it%20to%20my%20daughter.%20Of%20course,%20she%20was%20making%20joke%20of%20the%20pronunciation%20of%20the%20potato%20and%20kept%20%20identifying%20it%20as%20the%20%E2%80%98complicated%20potato%20%E2%80%99%20.It%20was%20her%20first%20time%20,%20and%20am%20glad%20to%20comment%20that%20she%20found%20it%20tasty%20and%20asked%20me%20to%20cook%20it%20again!.However%20,she%20suggested%20%20to%20add%20some%20chicken%20of%20course!!%20My%20mum%20uses%20koorka%20to%20fry%20with%20masalas,%20or%20at%20times%20prepares%20curry%20with%20them%20,%20but%20the%20recipe%20which%20I%20am%20sharing%20today%20is%20my%20favourite.%20I%20t%20is%20a%20dried%20version%20which%20is%20a%20good%20accompaniment%20with%20rice%20and%20curry.The%20standard%20thing%20one%20need%20to%20do%20before%20cooking%20the%20koorka%20%20is%20that%20it%20needs%20to%20be%20scrapped%20%20from%20its%20skin,%20diced%20and%20then%20boiled%20.%3C/p%3E%3Cp%3E250gms%20of%20koorka%20kizhangu%3C/p%3E%3Cp%3E8%20dried%20red%20chillies(soaked%20in%20hot%20water)%3C/p%3E%3Cp%3Epicture%20courtesy%20of%3C/p%3E%3Cp%3EWikipedia%3C/p%3E%3Cp%3ESoak%20the%20potatoes%20in%20water%20for%2030mins.Scrap%20the%20dirt%20out%20with%20a%20small%20sharp%20knife%20and%20place%20it%20back%20in%20tepid%20water%20to%20avoid%20discolouring.%20Do%20the%20same%20with%20all%20the%20potatoes.Grind%20into%20a%20fine%20paste%20the%20chillies%20and%20onions.Keep%20aside.%3C/p%3E%3Cp%3EDice%20%20the%20potatoes%20and%20place%20in%20a%20heated%20wok%20with%202%20cups%20of%20water.Add%20in%20turmeric%20powder%20and%20salt.Close%20lid.Cook%20until%20the%20potatoes%20soften%20and%20%20the%20water%20has%20evaporated%20,%20add%20in%20the%20grinded%20%20chilli%20paste%20to%20the%20koorka.%20Stir%20%20for%20about%20a%20min,%20add%20in%202%20tbsp%20oil%20to%20the%20paste%20and%20stir%20further.%20Lower%20the%20fire%20and%20close%20with%20a%20lid.Occasionally%20stir%20the%20paste%20and%20add%20more%20oil%20when%20necessary.When%20the%20side%20of%20the%20wok%20%20start%20turning%20brownish%20due%20to%20the%20masalas,%20start%20stirring%20and%20scrapping%20the%20masalas%20which%20is%20sticking%20on%20the%20wok.The%20masalas%20will%20start%20coating%20the%20potatoes.At%20this%20stage%20do%20not%20close%20lid.%20Keep%20stirring%20to%20avoid%20%20the%20masala%20from%20burning.%20Add%20oil%20if%20necessary%20.%20Keep%20stirring%20and%20scrapping%20the%20masala%20from%20the%20wok%20until%20you%20can%20see%20some%20greasiness%20on%20the%20wok.%20The%20masala%20should%20be%20well%20coated%20with%20the%20potatoes.%20Adjust%20seasoning%20(salt)%20.Throw%20in%20the%20curry%20leaves%20,give%20a%20few%20stirs%20and%20close%20fire.%20Dish%20out%20and%20serve%20as%20a%20side%20dish%20with%20rice%20and%20sambar%20/dal%20curry.%3C/p%3E%3Cp%3EMALAYSIAN%20DELICACIES%20WOULD%20LIKE%20TO%20WISH%20ALL%20FRIENDS%20AND%20BLOGGERS%20A%20VERY%3C/p%3E%3Cp%3E**~~**%20HAPPY%20%20%20ONAM%20%20%202013**~~**%3C/p%3E){kind=link}
