Spicy Ground Turkey And Cellophane Noodles

Ingredientes

  • 1/2 lb grnd turkey
  • 1 1/2 tsp rice vinegar
  • 1 tsp low-sodium soy sauce
  • 1/4 tsp sesame oil
  • 1 bag cellophane noodles - (3 3/4 ounce)
  • 1 tsp canola oil
  • 4 x scallions, white part and 2" green sliced
  • 2 x garlic cloves chopped
  • 1 x inch fresh ginger chopped
  • 2 tsp chili puree with garlic
  • 1 c. 98% fat-free no-salt-added canned
  •     chicken broth
  • 1 Tbsp. vodka
  • 2 tsp light soy sauce
  • 1 Tbsp. rice wine vinegar
  • 1/8 tsp sugar substitute
  • 1/4 c. minced cilantro
  • 1/2 lb snow peas strings removed,
  •     and sliced thin
  • 1/2 lb bean sprouts
  •     Fresh lime slices for garnish

Direcciones

  1. Marinate the turkey: In a bowl combine the turkey with the vinegar, soy sauce and sesame oil. Place in refrigerator and marinate for 20 min up to 2 hrs.
  2. In a bowl, soak the noodles in hot water for 20 min. Drain and cut into 2-inch lengths; set aside.
  3. In a wok or possibly heavy nonstick skillet, heat the oil till warm. Stir-fry the scallions, garlic, and ginger for 1 minute. Add in the turkey and chili puree. Stir-fry, breaking up the grnd turkey till it is cooked through. Add in the broth, vodka, soy sauce, vinegar and sugar substitute along with the noodles.
  4. Cook over high heat till the noodles absorb the liquid. Stir in the snow peas, bean sprouts and cilantro. Heat through, and serve immediately with lime slices.
  5. This recipe yields 4 servings.
