Receta Spicy Ground Turkey And Cellophane Noodles

Ingredientes
- 1/2 lb grnd turkey
- 1Â 1/2 tsp rice vinegar
- 1 tsp low-sodium soy sauce
- 1/4 tsp sesame oil
- 1 bag cellophane noodles - (3 3/4 ounce)
- 1 tsp canola oil
- 4 x scallions, white part and 2" green sliced
- 2 x garlic cloves chopped
- 1 x inch fresh ginger chopped
- 2 tsp chili puree with garlic
- 1 c. 98% fat-free no-salt-added canned
- Â Â chicken broth
- 1 Tbsp. vodka
- 2 tsp light soy sauce
- 1 Tbsp. rice wine vinegar
- 1/8 tsp sugar substitute
- 1/4 c. minced cilantro
- 1/2 lb snow peas strings removed,
- Â Â and sliced thin
- 1/2 lb bean sprouts
- Â Â Fresh lime slices for garnish

- Marinate the turkey: In a bowl combine the turkey with the vinegar, soy sauce and sesame oil. Place in refrigerator and marinate for 20 min up to 2 hrs.
- In a bowl, soak the noodles in hot water for 20 min. Drain and cut into 2-inch lengths; set aside.
- In a wok or possibly heavy nonstick skillet, heat the oil till warm. Stir-fry the scallions, garlic, and ginger for 1 minute. Add in the turkey and chili puree. Stir-fry, breaking up the grnd turkey till it is cooked through. Add in the broth, vodka, soy sauce, vinegar and sugar substitute along with the noodles.
- Cook over high heat till the noodles absorb the liquid. Stir in the snow peas, bean sprouts and cilantro. Heat through, and serve immediately with lime slices.
- This recipe yields 4 servings.
