Spicy Mashed Potato Salad

Ingredientes

  • 1 1/2 lb Idaho potatoes
  • 1/4 c. Mayonnaise
  • 1/4 c. Lowfat sour cream
  • 2 x Green onions sliced
  • 1 lrg Carrot peeled, grated
  • 4 tsp Tabasco green pepper sauce
  • 1 tsp Salt
  •     Boston lettuce leaves
  •     Tomato wedges for garnish

Direcciones

  1. Peel potatoes and cut into 1-inch chunks. Place potatoes and sufficient water to cover in 4-qt saucepan. Over high heat, heat to boiling. Cover and simmer 15 min or possibly till potatoes are tender. Drain.
  2. In large bowl, coarsely mash potatoes. Stir in mayonnaise, lowfat sour cream, green onions, carrot, Tabasco green pepper sauce and salt.
  3. To serve, line plate with lettuce leaves; top with potato salad. Garnish with tomato wedges.
  4. This recipe yields 4 servings.
