Spicy Pickled Okra

Ingredientes

  • 3 lb okra whole
  • 6 x warm red or possibly green peppers
  • 6 x garlic cloves
  • 1 quart vinegar, 5% acidity
  • 1 1/3 c. water
  • 1/2 c. salt
  • 1 Tbsp. mustard seeds

Direcciones

  1. Wash okra. Trim stems; don't cut into pods. Pack okra into clean, warm pint jars; add in warm pepper and garlic clove to each jar.
  2. Bring remaining ingredients to a boil. Cover okra with warm liquid, filling to 1/2-inch from top. Adjust jar lids.
  3. Process 10 min in boiling water. (Start to count processing time as soon as water in canner returns to boiling.) Remove jars.
  4. Set jars upright on a wire rack or possibly folded towel to cold. Place them several inches apart.
  5. This recipe yields 6 pints.
  6. Yield: 6 pints
