Spicy Shrimp Stuffed Mirliton

Ingredientes

  • 3 x Mirlitons boiled, halved, and seeded
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 c. Minced onions
  • 1/4 c. Minced bell pepper
  • 1/4 c. Minced celery
  • 2 tsp Chopped shallots
  • 1 tsp Chopped garlic
  • 1/2 lb Large shrimp peeled, deveined, each cut in 3 pcs
  • 1/2 c. Dry fine bread crumbs
  • 2 Tbsp. Finely-minced parsley
  • 1/4 c. Grated Parmigiano-Reggiano cheese plus
  • 2 Tbsp. Grated Parmigiano-Reggiano cheese for garnish
  •     Salt to taste
  •     Cayenne pepper to taste
  • 2 Tbsp. Minced chives see * Note

Direcciones

  1. Preheat the oven to 350 degrees.
  2. Scoop out the pulp of the mirlitons, leaving a 1/4-inch shell. Reserve the pulp.
  3. In a saute/fry pan, heat the extra virgin olive oil. Saute/fry the onions, peppers, celery, and shallots for about 5 min, or possibly till they are wilted and golden brown. Season with salt and cayenne. Add in the garlic, shrimp and reserved pulp. Saute/fry the mix for 5 min. Stir in the bread crumbs, cheese, and parsley. Remove from the heat.
  4. Fill each mirliton shell with the mix. Bake for 1 hour. Place the stuffed mirlitons on a platter. Garnish with chives, cheese, and Essence.
  5. This recipe yields 6 servings.
