.%20Just%20a%20simple%20supper%20of%20a%20tasty%20frittata,%20some%20salad%20and%20hot%20buttered%20toast.%3C/p%3E%3Cp%3EI%20love%20having%20a%20kind%20of%20breakfasty%20supper%20sometimes.%20Eggs%20fit%20the%20bill%20perfectly%20if%20you%20are%20wanting%20something%20quick%20and%20easy,%20that%20isn't%20going%20to%20heat%20up%20the%20kitchen%20or%20be%20a%20lot%20of%20faff%20to%20prepare.%3C/p%3E%3Cp%3EFrittatas%20are%20kind%20of%20like%20crustless%20quiches%20.%20.%20.%20You%20just%20beat%20together%20your%20eggs,%20with%20some%20cream%20or%20milk.%20Add%20some%20cheese%20or%20other%20ingredients,%20and%20then%20cook%20them%20briefly%20in%20a%20hot%20skillet%20until%20they%20are%20golden%20brown%20on%20the%20bottom%20and%20almost%20set%20.%20.%20.%20then%20a%20brief%20burst%20under%20a%20hot%20grill%20.%20.%20.%20til%20they%20are%20golden%20brown%20on%20top,%20and%20%22Bob's%20Your%20Uncle!!%22%20Dinner%20is%20served.%3C/p%3E%3Cp%3EYou%20can%20just%20about%20put%20anything%20you%20want%20in%20them,%20as%20long%20as%20the%20flavours%20are%20ones%20that%20go%20together%20well.%20Today%20I%20chose%20to%20use%20fresh%20baby%20spinach%20(for%20colour)%20sauteed%20chorizo%20sausage%20(heat,%20flavour%20and%20colour)%20and%20fresh%20and%20milky%20ricotta%20cheese%20(perfect%20against%20the%20heat%20of%20the%20chorizo).%20You%20can%20add%20herbs,%20such%20as%20the%20sage%20I%20added%20in%20mine%20today%20.%20.%20.%20they%20also%20give%20a%20flavour%20boost%20and%20some%20added%20colour.%3C/p%3E%3Cp%3ESeason%20them%20well,%20according%20to%20taste%20and%20your%20ingredients%20and%20you%20are%20done.%20I%20happen%20to%20love%20using%20leftover%20roasted%20veg%20in%20my%20frittata's%20from%20time%20to%20time.%20Roasted%20root%20veg%20are%20excellent,%20expecially%20with%20a%20bit%20of%20strong%20cheddar,%20red%20onions%20and%20some%20summer%20savoury.%3C/p%3E%3Cp%3EAnother%20favourite%20is%20oven%20roasted%20Courgettes,%20peppers,%20cherry%20tomatoes%20and%20onions%20.%20.%20.%20with%20a%20bit%20of%20feta%20cheese%20.%20.%20.%20and%20some%20garlic%20and%20fresh%20oregano%20of%20course.%20Kind%20of%20like%20a%20Mediterranean%20frittata.%20The%20leftovers%20are%20really%20tasty%20too%20.%20.%20.%20in%20lunches,%20on%20picnics%20.%20.%20.%20or%20just%20as%20a%20savoury%20snack%20when%20you%20are%20feeling%20a%20bit%20peckish%20.%20.%20.%3C/p%3E%3Cp%3ESomething%20for%20the%20weekend???%20Perhaps!%3C/p%3E%3Cp%3E*Spinach,%20Chorizo%20and%20Ricotta%20Frittata*%3C/p%3E%3Cp%3EServes%202%3C/p%3E%3Cp%3EThe%20perfect%20supper%20for%20two%20on%20a%20hot%20summer's%20evening.%20Quick%20and%20delicious.%20Salad%20on%20the%20side,%20buttered%20toast.%20Heaven.%3C/p%3E%3Cp%3E2%20chorizo,%20sliced%3C/p%3E%3Cp%3EHeat%20a%209%20inch%20nonstick%20skillet%20over%20medium%20high%20heat.%20Add%20the%20chorizo%20and%20sage%20and%20cook%20for%20several%20minutes,%20until%20the%20chorizo%20is%20golden%20and%20crisp.%20Add%20the%20spinach.%20Cook%20and%20toss%20it%20in%20the%20pan%20drippings%20until%20it%20is%20wilted.%20Whisk%20together%20the%20cream,%20eggs,%20salt%20and%20pepper.%20Pour%20into%20the%20pan.%20Place%20spoonfuls%20of%20ricotta%20around%20the%20pan.%20Reduce%20the%20heat%20to%20low%20and%20cook%20for%20about%203%20minutes.%20While%20this%20is%20cooking%20heat%20the%20grill%20to%20high.%20Place%20the%20frittata%20beneath%20the%20grill%20and%20cook%20for%20several%20minutes,%20just%20until%20the%20frittata%20is%20set%20and%20golden.%20Serve%20with%20thick%20slices%20of%20hot%20buttered%20toast%20and%20a%20tossed%20salad%20if%20desired.%20Delicious!%3C/p%3E){kind=link}
