%20and%20few%20cubes%20or%20pieces%20of%20cottage%20cheese%20(paneer)%20waiting%20to%20be%20used%20up.%20Simple,%20you%20end%20up%20making%20this%20rice.%20This%20is%20just%20an%20improvisation%20on%20palak%20paneer%20gravy%20that%20you%20must%20have%20seen%20in%20many%20blogs%20except%20here%20:).%20There%20are%20dozen%20ways%20of%20making%20this%20rice%20as%20well%20,but%20this%20is%20just%20my%20version%20with%20few%20changes%20here%20and%20there%20to%20suit%20my%20palate.%3C/p%3E%3Cp%3EThe%20estimates%20are%20actually%20guesstimates.%20I%20just%20cooked%20with%20whatever%20I%20had%20in%20my%20hand%20and%20since%20it%20was%20tasty,%20I%20am%20blogging%20it.%20But%20feel%20free%20to%20improvise%20on%20it.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3ECook%20basmathi%20rice%20in%20just%20enough%20water%20till%20done.%20The%20rice%20grain%20should%20be%20separate%20and%20the%20rice%20should%20not%20be%20overcooked.Preferably%20spread%20the%20rice%20in%20a%20big%20plate%20and%20let%20it%20cool%20a%20bit.You%20can%20separate%20the%20grains%20with%20a%20fork%20if%20needed.%3C/p%3E%3Cp%3EIn%20a%20deep%20pan,%20heat%20oil%20on%20medium%20heat.%20Add%20jeera/cumin%20seeds%20and%20let%20it%20sizzle.%20Add%20chopped%20onion,%20ginger%20garlic%20paste,%20slit%20green%20chillies%20and%20little%20salt.%20Saute%20till%20the%20onions%20become%20transparent%20and%20the%20raw%20smell%20on%20%20the%20ingredients%20goes.%20The%20onions%20may%20leave%20water%20during%20this%20process.%3C/p%3E%3Cp%3EAdd%20the%20cheese%20cubes%20to%20this%20and%20stirfry%20for%20a%20few%20minutes.%20Add%20in%20the%20chopped%20spinach%20and%20little%20more%20salt%20and%20let%20it%20cook%20for%20a%20few%20minutes.%20The%20spinach%20might%20give%20out%20water%20during%20cooking.%20Add%20the%20spice%20powders%20one%20after%20the%20other%20to%20the%20hot%20mixture%20and%20cook%20cover%20on%20low%20heat%20for%20a%20few%20minutes%20till%20all%20the%20flavours%20mingle%20and%20the%20ingredients%20get%20cooked.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20add%20cooked%20and%20cooled%20rice%20to%20this%20and%20mix%20well.%20Rice%20will%20absorb%20whatever%20liquid%20is%20there%20in%20the%20spinach%20mix.%20If%20%20too%20much%20liquid%20is%20there%20a%20few%20minutes%20after%20mixing%20then%20heat%20through%20for%201%20or%202%20minutes%20till%20correct%20consistency%20is%20reached.%20Adjust%20salt%20and%20served%20with%20raita%20optionally%20garnished.%3C/p%3E%3Cp%3EAsimple%20yet%20hearty%20rice.%20Easy%20to%20make%20and%20filling%20as%20well.%3C/p%3E%3Cp%3EHere%20I%20have%20used%20kasuri%20methi%20to%20add%20just%20a%20little%20sourness.%20Dried%20mango%20powder%20can%20also%20be%20used.%20Normally%20palak%20paneer%20will%20be%20having%20tomato%20chopped%20or%20puree.%20But%20I%20have%20omitted%20it.%20Why%20?%3C/p%3E%3Cp%3ERecently%20I%20came%20to%20know%20that%20the%20combo%20of%20spinach%20and%20tomato%20might%20cause%20kidney%20stones.%20The%20both%20have%20oxalates%20and%20kidney%20stone%20is%20usually%20calcuim%20oxalate.%20So%20its%20better%20to%20reduce%20the%20combo%20in%20cooking,%20especially%20in%20this%20rice%20or%20the%20gravy%20version%20as%20you%20are%20using%20paneer%20which%20is%20rich%20in%20calcuim.%20Go%20for%20any%20other%20souring%20agent%20or%20even%20avoid%20it%20completely%20to%20suit%20your%20taste%20and%20also%20health.%3C/p%3E%3Cp%3EMeanwhile%20grab%20a%20bowl%20and%20enjoy%20....%3C/p%3E){kind=link}
