Spinach Stuffed Red Peppers

Ingredientes

  • 2 med Sweet red peppers
  • 2 ounce Finely minced onion
  • 2 cl Garlic, crushed
  • 1 ounce Butter or possibly margarine
  • 1 1/2 quart Minced spinach, (284 g)
  • 4 ounce Cream cheese, cubed
  • 2 ounce Unsalted sunflower seeds
  • 1 tsp Lemon juice
  • 1 dsh Tarragon, crushed
  • 1 dsh Salt
  • 1 dsh Pepper

Direcciones

  1. Clean and halve peppers. Place in greased baking dish. Saute/fry onion and garlic till onion is transparent. Add in spinach and cook till moisture evaporates. Remove from heat. Fold in cheese, seeds, lemon juice, and seasonings. Fill each pepper half with spinach mix. Cover and bake 30 minutes at 360F/180C.
